Mexican Tacos

Tacos are one of the most popular recipes, the most famous and the main food in Mexican cuisine. Eating tacos is a tradition, and most of the population consumes them daily, besides that there is a great variety of them. In Restaurant Guadalupe Mexicana, we bring you two recipes, step by step, of chicken tacos and beef tacos, so you can enjoy them.

Chicken Tacos

While there are many variations of this delicious dish, chicken tacos are one of the most popular recipes. But the best thing about this Mexican dish is that it is easy and you can prepare it at home. If you want to delight in any dinner, Mexican chicken tacos are definitely an option that will not disappoint the palate of your family or guests.

Ingredients and preparation of chicken tacos

  • Corn tortillas for tacos
  • 1 onion
  • 1 or 2 chicken breasts
  • Olive oil or oil of your preference
  • Fresh parsley or coriander
  • Cheese
  • Salt and pepper

To fill the tortillas for tacos, the first thing you have to do is roast the pieces or the chopped chicken. Then, chop the onion and tomato into small pieces and place them in a previously heated pan with a little olive oil. Season to taste with salt and pepper. Add the finely chopped parsley and mix all the ingredients, until it is ready.

In a skillet, and if you don’t have it in a frying pan, heat the tortillas on a low heat and briefly, until they are to your liking, and fill the corn tortillas evenly with the chicken and the ingredients already cooked. Spread the cheese that you think is necessary, and if you want the piquete, you can add a chopped pico de gallo chile.

Beef or veal tacos:

Beef tacos are an exquisite dish that you should try to prepare. It is something very tasty and delicious, and although it takes more time to prepare, we assure you that it will be worth it. 

Ingredients and preparation of beef or veal tacos

  • Corn tortillas for tacos
  • 1/2 kilo of beef or veal for stewing
  • 10 tomatoes
  • 1/2 small onion
  • 4 cloves of garlic
  • 1 fresh or dried jalapeño
  • Cheese
  • 1 liter of water
  • Olive oil or the oil of your choice
  • Fresh parsley or coriander
  • Salt and pepper

First chop the tomatoes and cut the beef or veal into pieces for stewing, and season everything with salt and pepper. Gut the 4 cloves of garlic, place them in a pan with some previously heated oil, add the meat so that it can brown completely and then crumble more easily. After making the sauce, apply it to the meat and cover it until the sauce has joined with the meat and you feel the flavor you need.

Ingredients and preparation of taco sauce

  • 1/2 onion
  • 5 tomatoes
  • 2 peppers
  • 1 clove of garlic
  • Olive oil
  • Thyme
  • Salt and pepper

To prepare the sauce, finely chop the half onion and the garlic clove and brown them in a pan with the olive oil or of your preference. When ready, add the tomatoes and finely chopped peppers. Add some salt, pepper and thyme and cook for 5 minutes or until it has the consistency you want. Finally, place this preparation in one or more bowls, so that each diner can be served as desired.

Classic Mexican Guacamole:

Guacamole is a classic recipe in Mexican gastronomy. However, it is such a popular preparation that it has spread throughout the Americas, resulting in a great diversity of preparations, including variations of ingredients that give it a different touch. But this time, we will focus on the recipe of guacamole in the purest Mexican style. To prepare Mexican guacamole at home, you must have the following ingredients at hand:

Ingredients and preparation of classic Mexican guacamole:

  • 2 large, ripe avocados
  • 3 tomatoes
  • 1/2 onion
  • 1/2 tablespoon of chopped peppers
  • 1 tablespoon of chopped coriander
  • Half lemon juices
  • Salt and pepper

As a first step, cut the avocados in half, remove the seed to allow you to remove the avocado from its shell (Tip: Do not throw away its seed, when you finish the guacamole you can add it, without stirring, so that the avocado does not darken, in case you do not eat it all the same day or you wish it to last longer).

Cut and finely chop the tomatoes and onion. Then, add lemon and salt to taste, and mix all the ingredients until you get the right consistency. Now you just have to enjoy it and you can keep it in a refrigerator, as long as you follow the previous tip.

Mexican Red Chilaquiles

Chilaquiles are a very easy and quick recipe to make. It is a Mexican dish made with pieces of tortilla or fried corn tostadas, served with red or green salsa. In addition, other ingredients are usually included, such as thin strips of chicken or meat, cheese, chorizo, etc. The best thing about this recipe is that it uses ingredients that are easy to get, and that are often found in the food at home.

Ingredients and preparation of Mexican red chilaquiles

  • 1/3 cup of olive oil or the oil of your preference
  • 12 cut tortillas
  • 2 cups of red sauce
  • 1 cooked and shredded chicken breast
  • Spring Break (optional)
  • 1/3 cup chopped cilantro
  • 1/2 cup of cream cheese
  • Onion slices separated into rings
  • 1/2 cup of cream
  • Salt and pepper
  • Epazote

Cut the tortillas into large triangles or nachos, add to a pan previously heated with the oil you consider necessary and that of your preference, and let them brown. Then, drain them on absorbent paper and add salt to taste.

Take a frying pan and add a spoonful of olive oil and cook over medium heat. When it is hot add the 2 cups of red sauce. Season it with epazote, as this will give it a piquette that cannot be missing in any Mexican recipe. Add salt to taste. 

Add the tortillas or nachos that we previously fried, the shredded or shredded chicken, and always leave it at medium heat, for a few minutes. Now the desired moment has arrived! Serve the chilaquiles and add the cream, cheese and onion, as you like. You can add refried beans or avocado, and enjoy.

Green Enchiladas Gratin

This recipe will make your mouth water from preparation to completion. Who wouldn’t like to see a dish covered with grilled cheese? Here we will give you the ingredients and the steps you will have to take, to make this meal so spectacular.

Ingredients and preparation of green enchiladas au gratin

  • 2 chicken breasts
  • 8 corn tortillas
  • 1 red onion
  • Mexican green sauce (200 ml)
  • Liquid cream (100 ml)
  • Manchego cheese (200 g)
  • Chicken broth
  • Vegetable oil or the one of your preference

Season and sauté the chicken breast in a pan for 20 to 25 minutes, then shred. Fry the tortillas briefly and take them out, because their consistency should not be crunchy, but can be rolled up. Place the chicken and the sauce in the middle of the tortillas, in the amount you like, and wrap it up like a roll.

Place them in a tray, put the cheese on top and in between each roll, add the green sauce, and cover it with aluminum foil to take it to the oven for 15 minutes, approximately, or until you see that they are golden, and get ready to taste.

You can add cream and onion to your liking, at the time of serving.

Mexican Chalupas

Like all typical Mexican dishes, chalupas are prepared in different ways, in some regions. For example, the so-called traditional chalupa poblana is made with a boiled green and red sauce, which is poured over a fried lard tortilla, with onion and grated beef on top. However, in other places the preparations include other types of ingredients, such as potatoes, chicken, cheese or radishes. 

Chalupas are one of the most delicious dishes in Mexican gastronomy, and their main characteristic is their taste and texture. And in Mexico we can find them everywhere, so in Restaurant Guadalupe Mexicana in Quebec we want to make them reach you.

In any case, the chalupas are one of the most popular appetizers in Mexico. And this time, we share with you a quick and easy recipe, that you can prepare at home because the ingredients are not many, besides you can do it in a simple way.

Ingredients and preparation of Mexican chalupas

  • Corn flour
  • 2 shredded or shredded chicken breasts
  • Grated cheese
  • 1 large onion
  • 2 cloves of garlic
  • 4 serrano or jalapeño peppers
  • 1 cup red tomato puree (for the red sauce)
  • 1 cup of green tomato puree (for the green sauce)
  • 1 lettuce
  • Sunflower oil or the one of your preference
  • Salt and pepper

In this case, since you have both green and red tomato puree, place each one in a pot and blend onion, garlic, green bell pepper, serrano and jalapeño peppers, salt and bell pepper to taste. Then add it to the puree and let it boil for a few minutes. While you are preparing your sauces, prepare the flour and make small balls, so you can make tortillas. Then they will be fried in a frying pan with previously heated oil, and then drain them. 

When you have finished, cook the meat in a frying pan and cut it into thin strips. To serve, place the tortillas on a flat plate, add the filling, pour the sauce and cream cheese in small pieces, and finally, if you wish, place some fresh lettuce leaves and a little bit of onion on top. It’s easy, isn’t it?

Chiles in nogada

Although the list of ingredients is long, and may seem a little difficult, believe me it is not. This preparation, along with the steps we will take next, will make your job easier and you will be able to obtain a unique and delicious dish, which you will undoubtedly love, and you will want to prepare and eat it again and again.

Ingredients and preparation of chiles en nogada

  • 6 roasting peppers
  • 1 pound of minced pork
  • 3 tomatoes
  • 2 onions
  • 3 bananas
  • 1 peach
  • 2 blocks
  • 2 pears
  • 2 pomegranates
  • 50 g of almonds
  • 50 g of raisins
  • 50 g of olives
  • 50 g of capers
  • 1 clove of garlic
  • 1 clove
  • White wine
  • 150 g of nuts
  • 250 ml of milk
  • 100 gr of fresh cheese
  • 125 ml of chicken broth
  • 125 ml of wine
  • Sugar
  • Cinnamon
  • Salt
  • Fresh Parsley

You will have to prepare the nogada one night before the realization of the complete dish. Have the nuts ready and soak them in goat’s milk. The next day, put them in a grinder or blender with the cheese, a little sugar, cinnamon, wine and salt to taste, and then pass it through a fine strainer or a straining blanket.

Roast the peppers until they soften and it will be easier to peel them. Then, open the peppers with a knife, making a vertical wound to remove the seeds and to be able to stuff. In a frying pan put some oil, garlic and onion well chopped. Then, place the meat and season with salt and pepper to taste, and place previously crushed tomatoes, broth or chicken broth, and let it cook well.

Chop the fruits and add them to the meat when it is ready. Add the wine and the other spices, and let it boil. When the meat is cold, stuff your peppers, and when it is time to serve, place it on a plate, cover it with the sauce made with the nuts or walnuts, and garnish with parsley and pomegranates.
